G. Palmer, a cold storage expert, was asked to address the annual meeting of the Alberta Cattle Breeders’ Association on the subject of chilled meat. Palmer extolled the superiority of chilled beef to its frozen counterpart. He also pointed out that Chicago had sent fifty million pound of chilled meat to Britain in the first three months of the year. Loud applause greeted his rousing statement that Canada should ‘take the place in the business now occupied by the States.’ Yet, after discussing cost and profitability factors, Palmer concluded that government involvement was neceswary to expedite a national chilled beef trade.”
